Smash Burger

I had some ground beef I had to use up ASAP, and a restaurant nearby had Martin’s potato rolls for sale, and I had previous made some smash patty melts and homemade garlic mayo. I was also inspired to make caramelized onions by Adam Ragusea’s French Onion Pizza. So working with these things in mind, I decided to make a smash burger.

The burger patty is just run of the mill ground beef, smashed on my carbon steel crepe pan, cooked halfway on one side, salt, pepper, yellow mustard, flip, until it’s cooked. Pop on a slice of melty American cheese.

The caramelized onions were made ahead of time (they take a little while), and the pan while making them was deglazed with beef stock and nice 2019 Bourgogne white wine, with a pinch of extra sugar.

Other toppings include:

  • Store bought Hawaiian inspired BBQ sauce, with a hint of pineapple and habenero
  • Dill pickle
  • Ketchup
  • Dijon mustard
  • Homemade garlic mayo (it’s hiding under the patty)
